About Prosciutto & Fig

The Prosciutto & Fig pizza represents the perfect harmony between northern Italian culinary traditions and premium Canadian produce. This sophisticated creation is inspired by classic Italian antipasti combinations, transformed into a delicate yet satisfying pizza.

Our journey to create this pizza began with a quest to showcase the natural sweetness of fresh figs against the complex umami richness of aged prosciutto. The result is a balanced composition of flavors and textures that evolves with each bite.

The foundation of this pizza is our signature dough, which undergoes a 72-hour cold fermentation process for superior flavor and digestibility. Once shaped, the dough is lightly brushed with premium extra virgin olive oil infused with fresh rosemary, then topped with a light layer of mozzarella – just enough to provide a creamy foundation without overwhelming the delicate toppings to come.

After baking to perfection in our wood-fired oven, the pizza receives its crowning ingredients. The prosciutto di Parma we use is aged for a full 24 months, developing a complex, nutty flavor and buttery texture that melts in your mouth. It's sliced paper-thin and carefully arranged by hand.

The figs are sourced seasonally from the Okanagan Valley in British Columbia, known for its exceptional fruit quality. During peak season (August through October), we use fresh Black Mission or Brown Turkey figs, gently warmed by the residual heat of the pizza. In off-season months, we use carefully preserved Okanagan figs that have been poached in a spiced wine reduction to maintain their tender texture and enhance their natural sweetness.

Small dollops of gorgonzola dolce – a sweeter, creamier version of the classic blue cheese – provide pockets of tangy richness that complement both the sweetness of the figs and the saltiness of the prosciutto. Fresh arugula adds a peppery brightness and beautiful color, while the final drizzle of 12-year aged balsamic glaze from Modena ties all the flavors together with its complex sweetness and acidity.

Each component is thoughtfully sourced and prepared to create a pizza that offers a true taste of Italian-Canadian fusion at its finest.

I had this during fig season and it was absolutely transcendent. The combination of the sweet figs with the salty prosciutto and tangy gorgonzola is perfect. The quality of ingredients is obvious - that aged balsamic glaze is worth the price alone. My new favorite pizza anywhere!

This pizza elevated my expectations of what pizza can be. The prosciutto is sliced so thin it practically melts on your tongue, and the contrast with the sweet figs and that incredible balsamic reduction is divine. I love how the arugula adds a peppery freshness to each bite. Worth every penny for a truly gourmet experience.

I was hesitant about figs on pizza, but this combination has converted me completely. The balance of flavors is exquisite - nothing overpowers anything else. The crust has that perfect wood-fired char and chewiness. This is what happens when skilled artisans make pizza with top-quality ingredients. A true culinary delight that I can't stop thinking about!

Frequently Asked Questions

Are the figs fresh or dried?

During peak fig season (August through October), we use fresh Okanagan figs. Outside of season, we use preserved Okanagan figs that have been gently poached in a spiced wine reduction to maintain their tender texture and enhance their natural sweetness.

Is the prosciutto cooked or added after baking?

The prosciutto is added after the pizza comes out of the oven. This preserves its delicate texture and prevents it from becoming overly salty or chewy from the heat.

Can I get this pizza without blue cheese?

Yes, we can prepare this pizza without the gorgonzola dolce for those who don't enjoy blue cheese. We can substitute with a mild, creamy cheese like ricotta, or simply omit it entirely, as the other flavors still work beautifully together.

What wine pairs best with this pizza?

The Prosciutto & Fig pairs exceptionally well with medium-bodied red wines with good acidity, like a Sangiovese or Chianti Classico. For white wine lovers, we recommend a dry Prosecco, which complements the sweet and salty notes beautifully.

Is this pizza available year-round?

Yes, this pizza is available throughout the year. While the preparation method for the figs changes seasonally to ensure optimal flavor and quality, the overall taste profile and experience remain consistent regardless of when you order.
